Summer Bean Salad

I am taking the time to post this recipe because it was just that good!!  It was light enough and tasty enough to have over and over again!  You can either serve as a side dish or have it as the main meal for a light lunch. I served as a side dish alongside salmon fillets and it was just the right balance. We left the dinner table feeling satisfied, not overly full but just right and it definitely tasted like restaurant quality (not trying to swell my head or anything but you know, the truth is the truth..haha!)  It was only 69 calories and .4g of fat.  Very tasty!

Summer Bean Salad

Ingredients
  • 1 (15 ounce) can light red kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 small green bell pepper, chopped
  • 1 small yellow bell pepper, chopped
  • 1 1/2 cups chopped fresh tomatoes
  • 2 green onions, finely chopped
  • 1 cup chunky salsa
  • 1/2 cup red wine vinegar
  • 2 tablespoons chopped cilantro

Directions

  1. In a bowl, gently toss together the kidney beans, black beans, green bell pepper, yellow bell pepper, tomatoes, and green onions. In a separate bowl, mix the salsa, vinegar, and cilantro. Pour dressing over the bean mixture, and gently stir to coat. Chill at least 1 hour in the refrigerator before serving.

Rainy Day

Today there was not a lot to be done except usual yard saling and cleaning house.  It started raining later in the day and I decided straightening my hair might be fun.  Doesn't make much for reading but thought I would post pictures either way.

Mother's Day Weekend

"Her children arise and call her blessed; her husband also, and he praises her!" - Proverbs 31:28

I feel so incredibly blessed to be James and Susan's mother.  After struggling with infertility for so many years, you can imagine the joy in eventually becoming a mom to not one but two children and they are so beautiful, I can not even express how blessed I am.  They bring such joy and happiness to our home. Each day brings about new challenges but I thank God that he has given me the opportunity to be the mother to these two beautiful children and take honor in celebrating Mother's Day!


This is a picture taken just this past weekend of James and Susan at their next to last soccer game.  They are growing up so fast, it is unbelievable.
Where would I even start with my mother's day weekend! Oh my goodness, it was so much fun!  My husband treated me to a night at Sun Viking Lodge in Daytona as a gift...it is a small hotel with a 60 ft water slide for the kids.  They absolutely love it and we all know as parents that keeping your kids occupied and happy is just as much of a gift for you as it is for the kids, so that was really fun. 

When we came home from the hotel my daughter had made some pretty awesome cards and pictures for me and to me, homemade cards mean more to me than anything.  They were pretty special and you could tell she had worked hard on them to make them look really cute.    When I get a chance, I will scan in a couple of the cards.  Very touching!

Okay, well I am going for now.  After such a long weekend, I am really exhausted and ready to just relax.

Yardsale Finds

Today is Friday, which means yardsaling!!  I just love yardsaling.  I love all of the pretty cool stuff that you can find at such an amazing price.  I wanted to post a few things that I have been able to pick up lately that I love!  I have so many things that I have bought at yardsales but I will just post a few today.  God is so good, it is  not always things that I need at yardsales but there are times that God just knows my heart and I end up finding a tangible piece of his blessings. Let's say I need new shoes for the kids or a new coat or whatever it may be God just directs me to just the right place that I can find those things.  Today I only found one item I could not live without, an aged antique white birdhouse that I immediately placed on my dresser in my bedroom.  I will have to take a picture of that arrangement, I love shabby chic and that is as close to that I can get.

What is so neat about these finds are the picture was only $10.  The original owner said that she paid $95 for it, not that I would ever pay that much.  Also, the purse was only $10.  It is a Dooney and Bourke.  So these are just a couple of fun things that i have found.
Well, almost time to pick my kiddos up from school so I will go for now and will post more later!

Cleaning Days.....

Being a stay at home certainly has it's advantages. I love being a stay at home mom, helps me to focus more on my kids needs and also make my home more like God would want me to. Today I find myself continuing with laundry in hopes that tomorrow I can spend the morning yardsaling with my momma and then hopefully lay out by the pool in the afternoon, sounds like an ideal day, huh? No really most of my days during the week are spent doing laundry, mopping floors, vaccuuming so Fridays are kind of days to just have it about me. The weekends are usually spent with the kids sports and then Sundays with church so Fridays are much appreciated!
My sister and I are supposed to get together and have a girls night out soon and I am so looking forward to that! We are going to a hotel and have a spa/retreat type visit. It is going to be so much fun! I just love my sister! I am so glad that God has blessed me with her in my life.
Well, it's about time to pick my kiddos up from school so I better wrap it up.

Fly Lady

And the week begins...the week begins and I have I don't know how many loads of laundry to do and a kitchen to clean, a car that needs the interior to be steam cleaned, vaccuumed...whew! The list of things to do is becoming longer than the list of thing that I have actually accomplished! Not good. But life is good, I have a healthy family and kids that are happy and a happy husband! What more could a girl ask for?
Decisions, decisions..always decisions to be made! That is the great thing about life, you never know what twist and turn it will take next. God please guide me every step of the way!

Happy New Year!

And here we are in January...seriously, was it not just the year 2000 and we were all occupied with the Y2k scare, now here we are in 2012! How did that happen? Well, I will tell you God has certainly been with us over the years and I pray that he continues to lead and guide Tom and our family to make decisions that would bring glory to his kingdom and further our personal relationship with him. I worry that sometimes life gets in the way and I will forget the one true relationship in my life that I can not afford to lose and would never want to lose, that is a relationship with Jesus Christ. I pray that this year is the year that I rediscover my relationship with God in a way that I never imagined! When you follow God, it is like such a breath of fresh air, a darkness giving way to light, a heaviness lifted, oh my goodness I could go on and on.

Well, yesterday was Tom's birthday, January 15th. We had a very small get together but still fun nonetheless! I am posting a few pictures...I baked a cake for Tom, still need to work on that, I would love to start baking all the cakes, how fun would that be? haha!
